Taking a little break from all the Christmas treats to share one of my all time fav salads!

Star with a bed of greens then I added: sweet potato, avocado, red onion, soft boiled egg & the crispiest seasoned chickpeas👏

Honey Sesame Dressing:
1 tbsp olive oil
1 tbsp soy sauce
2 tsp sesame oil
1 tbsp white vinegar
1 tsp honey

💫For the chickpeas:

Ingredients .

1 can chickpeas
2 tsp olive oil
1/4 tsp thyme
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
1/8 tsp cayenne pepper

Directions
1. Rinse and pat chickpeas dry *
2. Toss all ingredients together and coat chickpeas
3. Line a pan with parchment paper and roast chickpeas in the oven for 40-45 minutes at 180° (give the pan a good shake halfway through)
4. Let cool and eat 🙂

.*for crunchy chickpeas it’s important to pat dry, I use a tea towel. Then rest them in the fridge for around 20-30 minutes (I find this gets rid of any moisture)
