This one is for the coconut lovers! These healthy coconut bites are the perfect little afternoon pick me up! They are keto friendly and vegan and take no time at all to whip up.

Ingredients
2 cups coconut flakes
1/4 cup coconut oil
1/3 cup maple syrup (use sugar free if keto)
3/4 dark choc, melted

Directions
1. Combine coconut flakes, oil and maple syrup in a food processor and mix until smooth
2. Roll the mixture into small balls, place in the freezer to set (15 minutes)
3. Dip coconut balls into melted chocolate
3. Place on a parchment lined tray and refrigerate for 30 minutes
