Healthier chicken parmigiana

This quick & easy version of chicken parm is so delicious with minimal effort! Perfect for an easy weeknight dinner!

Ingredients
4 chicken breasts
2 eggs
1 cup panko bread crumbs
1/2 cup shredded cheese
Tomato sauce
Fresh herbs

Directions
1. Whisk the eggs, salt & pepper and spices of choice (I used garlic powder)
2. Dip chicken into the egg mixture then into the panko mixture until coated
3. Place chicken on baking tray, spray with a little olive oil spray and bake for 15 minutes at 220ยฐC
4. Remove chicken from the oven, top each chicken breast with tomato sauce and sprinkle with cheese (add veggies to the tray at this step if you want – I usually add asparagus or green beans)
5. Bake for another 5-10 minutes
6. Sprinkle chicken with basil or parsley
