Salmon Sushi Bowls 🍣

Delicious & healthy weeknight dinner ready in less than 15 minutes! Enjoy all the elements of sushi in a bowl made in your very own kitchen!

Ingredients

2 Salmon fillets
Bok choy
1 clove garlic, minced
1 tsp ginger, minced
Avocado
Sesame seeds
Asian mayonnaise
Soy sauce
Sesame oil
1/2 cup rice

Instructions

Directions
1. Cook rice of choice according to directions
2. Heat a drizzle of olive oil in a frying pan on medium heat. Add ginger & garlic and sautΓ© bok choy until wilted (1 -2 minutes) add a splash of soy sauce, sesame oil & pepper. Remove from pan and set aside
3. Season the salmon with garlic powder, onion powder, salt and pepper and add to a fry pan with another drizzle of olive oil. (Approx 3 minutes per side)
4. To assemble: in a bowl add cooked rice, seasoned bok choy, seared salmon fillet, sliced avocado. Sprinkle with sesame seeds and a drizzle of Asian mayonnaise (I used @kewpieusa )
