Berry Crumble Bars…. Yes please 🙋‍♀️

These delicious berry crumble bars are made with just a few healthy ingredients, can be made with any fruit and are the perfect treat and even healthy enough for breakfast!

Ingredients

For the base layer:
1 cup Granola of choice (I used @plantlifefoodco cherry coconut)
1 cup almond flour or almond meal (@lovepbco discount code: countdowntildinner10)
2 tbsp coconut oil
2 tbsp maple syrup
Pinch of cinnamon
Pinch of salt

For the filling:
2 cups frozen raspberries
1 tbsp lemon juice
2 tbsp maple syrup
1 tbsp chia seeds

Topping:
About 1/2 cup Extra Granola

Directions
1. Preheat oven to 200°C
2. Combine all the base layer ingredients in a food processor and pulse 3-5 times until combined
3. Press mixture into a lined pan with parchment paper (I used a 7×11 inch)
4. Bake for 10 minutes
5. While that bakes prepare the filling. Heat frozen fruit in a saucepan over medium heat, stirring continuously and using a fork to mash the fruit. Add in the lemon juice, maple syrup and chia seeds. Mix for another few minutes or until thickens. Remove from heat and let cool for 10 minutes.
3. Pour fruit filling mixture into the lined pan, sprinkle additional granola on top and gently press into fruit mixture
Bake for an additional 5 minutes. Remove from oven and let cool completely before cutting
*store in the refrigerator
