My simple Mediterranean frittata is perfect for breakfast, lunch or dinner. And great as meal prep too.

Served with crusty bread and a side salad this is the perfect weeknight dinner and meatless Monday meal πŸ™Œ

Ingredients 
10 eggs
1 red capsicum, diced
1 zucchini, diced
1 small red onion, diced
1 cup baby spinach
1/4 cup kalamata olives
1/4 cup feta cheese
1 tbsp extra virgin olive oil
1 tsp dried oregano
Salt & pepper

Directions
1. Preheat your oven to 200Β°C
2. SautΓ© onions in a non stick pan with a drizzle of olive oil. Once onions are translucent add capsicum and zucchini. Cook until tender
3. Add spinach, oregano, salt and pepper. Remove from heat
4. In a separate bowl, whisk the eggs and add half the feta and olives
5. Pour egg mixture into pan with the veggies. Gently mix so that everything is combined
6. Top with extra cheese and olives and transfer pan to the oven
7. Bake For 20-25 minutes until perfectly golden and cooked through
