Quick and easy dinner tonight. The CRISPIEST chicken strips – using gluten-free cornflakes instead of breadcrumbs.
This was only 4 ingredients plus a few spices to jazz up the flavour!
Less than 200 calories and over 40g protein per serve 💪
And they were the biggest hit with the entire fam. Served them with sweet chilli sauce and veggies on the side 👌
2 chicken breasts, cut into strips
1/3 cup flour of choice
2 cups gluten free cornflakes
Spices: Italian seasoning, paprika, garlic powder, salt and pepper
1. Preheat oven to 200°C
2. Add flour and spices in one bowl, in another bowl whisk the eggs, and add cornflakes to a large plate
3. Dip chicken strips in flour, eggs and then the cornflakes, then place on a sheet pan lined with parchment paper
4. Bake for 20 minutes or until chicken is cooked through
